Ingredients
4 1/2 cups Flour
1/4 teaspoon Baking soda
1/2 teaspoon Salt
1 teaspoon Ground cinnamon
1/2 teaspoon Ground cloves
1/2 teaspoon Ground ginger
1 cup Light brown sugar, packed
1 cup Butter, soft
1 1/2 cups Light molasses
1/2 teaspoon Cider vinegar
1/4 cup Butter
4 cups Confectioner’s sugar
1/4 cup Cream, scalded
1 teaspoon Vanilla
Preparation
Sift dry ingredients together in the bowl of a stand mixer.
Add sugar and mix well.
Gradually add butter and mix thoroughly.
Mix in molasses and vinegar.
Turn dough onto a strip of plastic wrap, pat into an oblong, wrap well and chill for several hours or overnight.
Preheat oven to 350.
Roll out, a small amount at a time, on a floured board to 1/8" thickness. Cut with floured fancy cookie cutters.
Place on greased baking sheets and bake 10 minutes, or just until brown.
Cool on racks.
Blend 4 icing ingredients together until smooth.
Divide into small bowls and add food coloring as you wish.
Keep plastic wrap over bowls to keep icing from drying out.
