Ingredients

2 bags Baby potatoes in the mesh bags - reds and golds

8 Eggs hard boiled

3 cups Celery - diced

1 can Black olives drained and coarsely chopped

1 cup Red onion minced

2 cups Sweet gerkin pickles drained and minced

1/2 cup Parsley - minced

2 tablespoons Celery seed

2 cups Miracle Whip - at least 2 cups but add more as needed

1 cup Dijon mustard - about a cup but add more as needed

Preparation

Boil the potatoes until tender, let cool and then cut into quarters

Cut hard boiled eggs into quarters

Add potatoes, eggs, olives, celery. onion, pickles, celery seed and parsley to a big bowl and stir gently to mix

Gently stir in Miracle Whip and mustard to even coat all of the ingredients. If it seems dry, add in more of both to get a nice moist mixture

Let sit in refrigerator at least 3-4 hours for the flavors to mix, then serve
