Ingredients
1 cup butter
6 ounces cream cheese
2 cups flour
4 eggs
2 1/4 cups packed brown sugar
1 teaspoon vanilla
1 pinch salt
3 tablespoons melted butter
1 cup chopped pecans
Preparation
Cream together butter and cream cheese. Mix in flour.
Using small scoop, place a ball of dough into each of 48 mini muffin tins. Press in to form a well in the center, going up the sides of the cup.
Mix together eggs, sugar, vanilla, and salt until smooth. Try not to whip in air. You don’t want to add volume.
Mix in the melted butter. Then stir in the pecans.
Using small scoop, fill each well with the pecan mixture.
Bake at 350 degrees for 20 minutes.
