The big Super Bowl game is coming up and these mini fish taco cups would be a great addition to your appetizer menu or Taco Tuesday. A mini fish taco is a smaller version of fish taco and instead of using a tortilla or taco shell, wonton wrappers are used for the crunchy shell. Wonton wrappers are great because they make a great cup holder for just about anything! If you don’t like fish tacos you can do a regular beef taco. With the help of prepared cabbage slaw mix, you will see how quick and easy these fish tacos come together.
How to Mini Fish Tacos
Place wonton wrappers into 12 cupcake tins. Bake at 375 for 10 – 15 minutes or until crispy. Spray with cooking spray to get crispy if needed. Heat a non stick skillet. Sprinkle fish with old bay seasoning (cajun seasoning works too) or whatever your favorite fish seasoning is. Cook fish until they’re white in the middle. In a bowl combine cabbage, blood orange juice, and green onion.In another bowl combine chipotle sauce, mayonnaise, sour cream, a dash of lemon juice. Season with salt and pepper, just a dash of each.Layer taco cups with cabbage mix, fish, and then sauce. Enjoy!Serving size, 1 fish taco cup

Some stores even have their version of this sauce already bottled up if you like fast kitchen hacks like that, it might be worth looking for a bottle.
