Ingredients
4 Chicken thighs, skinless, boneless
1 Onion, thinly sliced
4 cloves Garlic
1/2 stalk Celery, thinly sliced
6 Sweet Peppers, little ones
8 Crimini Mushrooms, quartered
8 Grape Tomatoes
1/2 cup Cilantro, chopped
1 tablespoon Spices: Turmeric, cumin, paprika, sage, thyme, salt, pepper
4 tablespoons Lime juice
1/2 Carrot, julienne
1 cup Baby Spinach
Preparation
Coat chicken with spices and brown in olive oil
Remove chicken from pan and sauté mushrooms, peppers on high heat
Remove mushrooms and peppers. Lower heat and sauté onions, garlic, carrots, celery, grape tomatoes(briefly)
Put it all together and bake at 350 for thirty minutes
