Ingredients

2 Poblano Chilies, large

3 Russet Potatoes, peeled and cut into cubes

1/2 cup Milk, warmed

1/4 cup Butter

1 cup Cheddar Cheese, coarsely grated

Preparation

Char poblano chillies, let weep in a bag and peel

Cook potatoes in large pot of boiling water, about 20 min. Drain

Add Milk, butter and mash potatoes.

Add cheddar and chillies. Season with Salt and pepper to taste.
