These Low carb enchiladas are a quick and easy weeknight dinner recipe that anyone will love. Top the enchiladas with your favorite toppings such as cheese, sour cream, lettuce, or pico de Gallo. An enchilada is usually made with some type of flour or corn tortilla, but depending on the type of diet you’re on you might be looking for a different option. Lettuce wraps are a fun alternative but since I made this recipe there have been many improvements in the low carb wrap industry. If I had made this same recipe today I’d use a low-carb mission tortilla wrap or one of those Folio or pure cheese wraps.

What Ingredients do I need for Low Carb Enchilada Wraps 

In this section, you can find substitutes or suggestions for certain check here Hamburger - can sub lean ground beef or ground turkey  Enchilada sauce - 10 to -15 ounce can such as Old El Paso or just make your own homemade sauce  Romaine lettuce, Bib Lettuce, or Boston Lettuce  Roma tomatoes Scallions Reduced fat mexican cheese blend Toppings - Sour cream, black olives, sliced radishes, cotija cheese, chopped fresh cilantro, diced red onions 

How to make Low Carb Enchilada Wraps 

In a non stick skillet cook the ground beef.When the ground beef is cooked, drain any leftover fat and add in the can of enchilada sauces.Pull apart the romaine lettuce leaves. You can serve them in a casserole dish if you want, but I just served mine on some plates. Top with the hot ground beef, do not put it on the lettuce cold or else the cheese won’t melt. Top with tomatoes, lettuce and sour cream.
