Ingredients
3/4 cup Arborio rice
1.5 cups Lobster broth
1 cup chopped Onion
3 cloves chopped garlic
2 sprigs chopped thyme
1/2 teaspoon dried tarragon
1 tablespoon marasala wine
1 tablespoon cognac
1/4 cup shaved pecorino
1 tablespoon chopped parsley
1 tablespoon tomato paste
Preparation
Melt butter in instant pot on saute mode
add onions and saute till soft
add garlic and saute additional 2 mins till onions lightly browned
add thyme and tarragon and stir
add arborio rice and saute 1min
deglaze with marsala wine and cognac
Add hot lobster broth, tomato paste and well
CLose instant pot for 6 mins pressure cook. Quick release when done
Stir in pecorrino and black pepper. Then serve topped with chopped parsley
Served topped with sauted garlic shrimp , or seared scallops with fried sage leaves & side of sauted rapini
