Ingredients

1 sweet potato

2 tablespoons olive or avocado oil

1 handful bare Toasted Coconut Chips

1 scoop greek yogurt

1/2 sliced avocado

1 tablespoon green onions

Preparation

  1. Heat oven to 400° F.

  2. Use a fork to poke several holes in each sweet potato. Rub with 2 Tbsp oil; season with salt. Bake on a rimmed baking sheet until tender, 40 to 50 minutes.

  3. Split sweet potatoes open; mash lightly with a fork. Top with greek yogurt, sliced avocado, green onions, and bare Toasted Coconut Chips. Season with flaky salt and black pepper. Dig in!
