Ingredients

1 piece egg

2 tablespoons Cooking Oil

1 cup Flour

1/2 teaspoon Salt

1 cup Sugar

1/4 cup Milk

2 teaspoons Baking Powder

1 pound Rhubarb

1 cup Boiling Water

Preparation

Combine all ingredients except rhubarb

Mix at low speed of mixture until well blended.

Spread in well greased 9" square pan.

Add rhubarb to boiling water in saucepan.

Return to boiling over high heat, separating fruit with fork.

Pour over batter in pan.

Bake at 400 degrees for 24 - 30 minutes until golden brown.

Serve warm or cold with sweetened whipped cream.
