Ingredients

1 package Vito Sausage Patties

1 cup Cooked Rice

1 can Crushed Tomatoes

1 tablespoon Worchestershire Sauce

1 tablespoon Garlic Powder (measure with your heart)

1 tablespoon Onion Powder (measure with your heart)

1 cup Onion (red or cooking) (Use one whole chopped into small pieces)

1 tablespoon Italian Seasoning

1 Parmesan Cheese (sprinkle generously)

8 Portabello Mushrooms OR Peppers (or any combination)

Preparation

Set the rice to cook in the rice maker

Cook the sausage patties in a frying pan. Once they start to brown, break them up into little pieces and add the onion. Sauté until cooked.

Prepare the peppers/mushrooms. Cut the peppers in half - leave the stems in the peppers but clean out all of the seeds. If using mushrooms, use a spoon to clean out the gills and add them to the sausage/onion mixture

Add the crushed tomatoes to the pepper/onion mixture. Let it simmer for a couple of minutes and add all the spices

Mix in the cooked rice and the Parmesan cheese, and let it sit for 15 minutes

Fill the peppers/mushrooms fully. Make sure to fill in all the cracks and smoosh the mixture in.

Top with a generous amount of the italiano cheese (there’s no such thing as too much!)

Bake at 375 for 20 minutes or until the peppers/mushrooms are cooked and the cheese is melted
