Ingredients

3 Eggs

2 cups King Arthur Keto friendly wheat flour

2 cups Allulose

3 cups Zucchini - raw, unpeeled, grated

3/4 cup Coconut oil (or high oleic sunflower oil)

1/2 cup Whole wheat pastry flour

1 tablespoon Molasses

1 tablespoon Cinnamon

1 teaspoon Vanilla extract

1 teaspoon Maple extract

3/4 teaspoon Salt

3/4 teaspoon Baking soda

1/4 teaspoon Baking powder

1 cup Walnuts or pecans

Preparation

Beat eggs with mixer until foamy, then mix in allulose and wet ingredients. Mix in dry ingredients and stir in nuts.

Heat oven to 325F. Bake in 2 loaf pans with parchment paper at bottom for 55-60 minutes.
