Instant Pot Turkey Neck Soup is something that was a last minute, not thought out Instant Pot recipe that is now going to feature in the Milner house every time that we enjoy roast turkey with all the trimmings. I last cooked a whole turkey for Christmas 2000 and haven’t cooked one since. It is not because I can’t, or that I am worried about dry turkey syndrome, it is just that Dominic is a chef and it’s his favourite job. At Christmas he will have the job of the roast turkey and I will be in charge of the trimmings. I will cook the roast potatoes, the homemade stuffing, the pigs in blankets, the gravy, the vegetable bake and of course the roasted parsnips. Dominic will roast the turkey and help me with the prep, as me doing prep is like watching paint dry. I am not kidding when I say that I am that slow! But one part of the kitchen I excel at is using leftovers and making sure we don’t suffer from food waste. I love using everything up. So, when Dominic was showing me the size of the turkey neck that he was about to throw in the bin, I was screaming at him to keep it as we can get a lot of use out of it. 5 minutes later it was in the Instant Pot and our Instant Pot Turkey Neck Soup was born.

There is no point sugar coating it, the pictures for our turkey neck soup in the Instant Pot are far from beautiful. That is because there was no digital camera coming out, just my Iphone 7. There were no plans about lighting, which were terrible last Christmas Eve and I just took the pictures as it happened and even though the food looks ugly it is as real life as you’re going to get. The ingredients were prepped and thrown in the Instant Pot at the last minute. We were too busy prepping the rest of the Christmas food to care about how things looked. But our Instant Pot Turkey Neck Soup tastes delicious and it’s the turkey neck soup that keeps giving back over and over again. And then you can remove the turkey neck meat from the bone and use it as your dream turkey stock. A bit like the way you claw away at a pork shoulder when making pulled pork. It is so easy to cook turkey neck soup in the Instant Pot Pressure Cooker. You add to the Instant Pot:

Then cook the turkey neck on manual pressure for 30 minutes. Because there is not a lot in the Instant Pot, it helps to tenderise the turkey neck and give you the best tasting turkey neck soup that you’ve ever had.

The benefit of our turkey neck soup recipe is that it can be what you want it to be. It can be Instant Pot Turkey Neck Soup or add a little more liquid to it during the cooking process and it can be Instant Pot Turkey Stock. Even though I bagged it up into the freezer and called it Instant Pot turkey neck soup, in reality I have used it more as a stock than a soup. My favourite use (so far) has been to add it to an Instant Pot Potato Corn Chowder.
