Cuban Pork Fried Rice
My first taste of Cuban Pork Fried Rice goes way back to the Easter of 2006. We were on a family holiday to Cuba and it was just the two of us and Kyle. Back then Kyle was just 4 years old and throughout our holiday everybody was mentioning how cute our 4 and a half year old was. I remember him sleeping on me on the plane going home on the night flight in his pyjamas and everyone coming over to look at him on the way to the toilet. Weird to say that now, as he sits beside me working for us as a soon to be 19 year old. But back then in Cuba I have 3 main memories:
Lazy Days – we spent the days either by the pool or the beach and barely moved. It was the most relaxed holiday I have ever had. The water sports were great fun and we spent almost all day on the ocean.The Camera – You spend your entire holiday taking memorable photos and then Dominic accidentally wiped the photos from the camera just before we left. We took a few emergency last minute photos, but the rest of it is all about the memories.The Food – It was awful. We had paid for all inclusive and then to find out that you are presented with awful food is the worst thing. The only thing that tasted good was the Cuban Fried Rice and that is all I ate for 2 whole weeks.
All these years later, I am still obsessed with Cuban Fried Rice, so after making our instant pot brown rice, a Cuban version was top of my instant pot to do list.
Instant Pot Pork Fried Rice + Two Little Assistants
One thing that I am very passionate about is teaching my kids how to cook. I hate the fact that I entered adulthood without hardly any cookery knowledge and that just shouldn’t happen to kids. We always need to eat and kids learning about nutrition and what goes into a meal is so important to me. When the instant pot pork fried rice was cooked, they grabbed a bowl each for their lunch and were proud of the food that they had just made and then asked what we were making for dinner.

I was very lucky to receive a large bag of brown rice and after learning how to cook basic batches of instant pot brown rice, I have been experimenting each day with different ways of making brown rice exciting in the instant pot. Cooking pork fried rice in the instant pot is EASY and that’s one of the reasons it is perfect for teaching your kids to cook. Instant Pot Pork Fried Rice Instructions:
Mix your Cuban seasonings in a small container.Saute onion, garlic and ginger in the instant pot.Add in cubed pork and seasonings.Deglaze with soy sauce.Rinse and add brown rice.Add stock, stir, seal and cook.
Yes really, that is all there is to it when you pressure cook your pork fried rice. It is a very easy recipe and one that you make ahead for your weekly lunches or take with you to work as it tastes nice cold too.

The Cuban fried rice seasonings are not complicated, and I have them all in my pantry, so I had no online ordering to do for obscure items. The main Cuban fried rice seasoning blend includes:

You can also give it to your children to mix for you, like I did as they love helping with these kinds of jobs in the kitchen.
Instant Pot Pork Shoulder & Rice
My favourite pork to use in my pork fried rice is pork shoulder. Here in Portugal they sell cubed pork shoulder. It is much cheaper than a classic pork shoulder or Boston Butt and I often use it in our Slow Cooker Asian Pulled Pork. But what I find is that the cubes are way too big for making this instant pot pork fried rice and will cut them down into much smaller pieces before loading them into the instant pot. Another reason for using pork shoulder is that it produces a much tender cut of pork and you will be thankful that you used pork shoulder when you taste the fried rice.
