Instant Pot BBQ Chicken   - Weeknight dinner has never been easier. This recipe for BBQ chicken uses frozen chicken breasts. No defrosting! Add in your favorite BBQ sauce at the end. I don’t know why I haven’t made chicken in my Instant Pot sooner! If your Instant Pot intimidates you, try making this recipe first. It is super easy and you will be amazed at how fast it cooks frozen chicken! The only hard part about learning the Instant Pot to me was closing the lid properly. I still struggle with that sometimes but there are two handles on each side of the pot and on your lid. Just make sure those are properly aligned and that usually helps me with making sure the lid is properly closed. I was craving BBQ chicken after watching a youtube video. They had made bbq chicken in the slow cooker and I didn’t want to wait all day to eat. Plus it was already evening. Enter your Instant Pot. The Instant Pot cooks frozen chicken breasts in 20 minutes. 20 minutes! The chicken comes out super moist and is easy to shred with your fingers, fork, KitchenAid mixer or whatever it is you use to do that. I prefer using my hands after the chicken has cooled off. This Instant Pot BBQ Chicken is zero points depending on what type of BBQ sauce you use. I like to use G Hughes sugar-free BBQ sauce or Stubbs to keep the chicken 0 and then I will serve it with a light bun to make chicken sandwiches. This is not sponsored, by the way, I just really like those 2 BBQ sauces. Oddly enough that sauce doesn’t bother me. Most sugar-free stuff does. I just like to test it first to see if it agrees with my digestive system. I hesitate to call any recipe zero points now if there is some kind of tortilla or bun added to it. I know that I’ll get comments below saying this isn’t zero points if you use a bun. I get that but the chicken + sauce is the part that is zero points. 

How to make Instant Pot BBQ Chicken

Place your frozen chicken breasts in the bottom of your Instant Pot with a cup of water. Place the lid on your Instant Pot and set it to sealing. Press manual (high pressure) and set to 20 minutes. Let the pressure naturally release for 10 minutes. Drain the extra water at the bottom of the pot. Shred the chicken and add the BBQ sauce. Enjoy on sandwiches, salads, quesadillas, BBQ plates and more!

Tips for Instant Pot BBQ Chicken

You can use a hand-held mixer to shred the chicken.  Place the chicken into a deep mixing bowl and press the beaters into it. Turn the hand mixer on low speed, and let it do its thing until the chicken is fully shredded. Shred the chicken with a fork.  On a plate or in a bowl, pierce a piece of boneless chicken with two forks. Both forks should have their prongs facing in a downward curve. Press the prongs of one fork into the center of the chicken and apply firm downward pressure. With another fork, pierce the chicken near the place where the prongs of the first fork penetrated. Then, pull the second fork away from the first in a straight line. Slow Cooker Shredded Chicken: If you are using your slow cooker for making BBQ Chicken place the chicken on the bottom and add 1 cup of water. Cook on low for 6 to 8 hrs or 4 hours on high. Drain the liquid, and shred the chicken. See how easy it is to use both cooking devices to make cooking a breeze? What to serve with your chicken? I like to serve my BBQ chicken with some Trader Joe’s reduced guilt mac and cheese  (8 Smartpoints) and a side of green beans. Usually, I like to make my own mac and cheese which I will leave a link for down below, but this night I was feeling extra lazy about cooking. If you are wanting to make this with a sandwich use a light bun. My favorite light bun is Village Hearth. Freeze your shredded chicken. If you make a big batch, you can freeze it in a sealable container and thaw it out in batches as needed. By making a large batch of shredded chicken at once, you will save time and effort breaking out and setting up your mixer every time you want a meal with shredded chicken.
