Ingredients

6 Roma Tomatoes , ripe

1/3 White Onion, chunk

2 cloves Garlic

1/2 bunch Cilantro

3 Serrano Peppers

8 Eggs

4 Corn Tortillas

Preparation

Place all ingredients into pot, cover with water, add salt.

Bring to boiling on high heat.

Cover with lid and turn heat down to just a low boil.

Simmer until tomatoes are soft and cracking.

Scoop out all ingredients from water into blender.

Gently pulse in blender.

Add water to achieve desired consistency.

Salt to taste(be generous)

Heat up tortillas in frying pan and place one on each plate.

Cook eggs sunnyside up and place on top of tortillas.

Cover with sauce
