Ingredients
1 cup Super Lucky Elephant Thai Hom Mali Jasmine Rice
3 cups Chicken or vegetable stock
3 cups Pumpkin, peeled, seeded and cut into chunks
1 head Onion, chopped
2 tablespoons Butter
1 clove Garlic, crushed
1/2 cup Mascarpone Cheese
2 tablespoons Parmesan, grated
1 handful Sage leaves, fried
1 handful Parmesan, shaved
2 tablespoons Sage, chopped
Preparation
Over a medium heat, cook butter and onion in a large saucepan for 5 minutes or until onions are translucent.
Add in chopped sage and garlic. Cook until sage becomes crisp, about 2 minutes.
Add pumpkin and rice.
Stir over heat for about 1 minute.
Pour in chicken or vegetable stock. Simmer for about 25 minutes.
Stir occasionally until pumpkin and rice are tender. Be sure to drain any excess liquid from the mixture.
Stir in cheeses until mixture is creamy. Use fresh cheese for best results.
Garnish with fried sage and fresh parmesan shavings.
