Ingredients

3 cloves Garlic

4 to 5 pieces Caramom pods (open to release flavor)

2 stalks lemon grass

2 teaspoons Veggie Base (eqiv to 2 cups)

14 cups Water (only 14 if using real broth)

6 cloves Whole Cloves

5 pieces Star Anise Pods

1 teaspoon Whole Coriander seeds

1 teaspoon Whole fennel Seeds

1 stick Cinnamon Stick

1/3 cup Fish Sauce / Patis

2 pieces Yellow Onions Medium

1 piece Ginger Large Piece

3 pieces Garlic

2 cups Bone Broth

Preparation

Char/Roast Onions and ginger

Toast hard spices

Boil 1 Gallon (16 cups of water)

Add Onions, garlic, ginger, lemongrass, and toasted spices to boiling water.

Simmer until stock is reduced to half (about 2 hours)

Strain broth and remove all solids

Add bone broth

Add 2 teaspoons of veggie broth base ( or 2 cups of Veggie broth)

Add Fish Sauce/patis

Bring broth to simmer
