Donuts don’t have to be off-limits on a weight loss journey! You can still eat them with this healthy recipe for baked blueberry donuts!
Baked Blueberry Donuts
Do you think donuts are off-limits on Weight Watchers or when dieting? Well, think again because you can have donuts on Weight Watchers just as long as you are still in your points limit for the day or calories. These blueberry donuts are baked in a donut pan and are only 3 smart points for one donut! I know a lot of people will come here and they think that a donut will ruin their diet or that donut is too high in points for me. These donuts are made with healthy ingredients such as unsweetened applesauce, egg whites, and milk. There are little amounts of sugar used in this recipe because the blueberries give them enough sweetness for my taste. One thing that I do when I want to bake sweet things like this is to save up my points for them or eat more zero point foods to be able to enjoy something like this. You can also freeze these baked donuts for later if you don’t want to eat them all right away. How to Make Baked Blueberry Donuts
Preheat oven to 325.In a bowl mix together the dry ingredients: flour and salt. In another bowl mix together the wet ingredients: sugar, milk, eggs whites, and applesauce. Pour the wet ingredients into the dry ingredients and stir until well blended. Add blueberries to the donut batter and gently fold them in. In a dough pan, use a tablespoon and drop two tablespoons full of the batter into each side of the doughnut pan. If the batter doesn’t look like it will fill the hole completely use your fingers to spread the batter evenly. Bake for 16 minutes.While the doughnuts are baking make the glaze. Mix together powdered sugar and milk together and drizzle over doughnuts when they’re cooled. Makes about 6 large doughnuts. I have a doughnut pan with at 6 holes in it. Not the mini kind.1 donut is 3 smart points.
WHAT INGREDIENTS DO I NEED TO MAKE BLUEBERRY DONUTS?
To make these donuts more WW friendly, I used less sugar, egg whites, unsweetened applesauce, and self-rising-flour. Self Rising flour is a little bit lower in points versus regular flour and already has baking soda or baking powder added to it, so that it doesn’t need any type of yeast or leavening agent. For the Donuts:
¾ cup Self Rising Flour¼ teas salt2 tablespoons of sugar2 tablespoons of low-fat milk or unsweetened almond milk1 egg white1 teaspoon of vanilla 3 tablespoons unsweetened applesauce¼ cup of blueberries
For the Glaze: (optional)
4 tablespoons of powdered sugar1 to 2 teaspoons milk
How to freeze or store donuts for later
Did you know that you can freeze donuts? Yah, I had no clue either. I love this idea because if you make a whole batch of these donuts right away then you don’t have to gobble them all up in one sitting and you can take them out whenever you need them!
Line a cookie sheet with parchment paper or wax paper. Place the donuts on to the cookie sheet and then place the cookie sheet in the freezer. Allow the donuts to freeze for up to 3 hours. When the donuts are done freezing take them off of the sheet pan and store them in plastic bags to save on freezer space.
