Ingredients

1 quart milk

1 cup grits/polenta/corn meal (not quick cooking)

1/2 cup parmesan grated

1/2 cup butter

1/3 cup butter

1 cup Gruyere grated

bit pinch salt

.000 pinch pepper

Preparation

  1. bring milk to a boil and add 1/2 c butter. 2. stir in grits. 3. stir until consistency of cream (2 - 3 minutes).4. Remove from heat. Add salt, pepper and beat with electric beater 2 minutes. 5. Add rest of butter.6. Stir in Gruyere. 7. Pour in greased dish. 8. top with Parm. 9. Bake uncovered at 350 for an hour or less, till crusty. 10 you can make ahead (night before) and cook before serving.
