6 cups flour, sifted

Preparation

Sift flour, salt, and sugar, work in shortening, then ice water. Put dough through biscuit machine 150 times or process with a heavy mallet about 30 minutes. working in 1 1/2 cups additional flour. Roll dough to 1/3 inch thick. Cut in rounds, use a fork to create decoration in the tops. Bake 30-35 minutes at 375 degrees. Soft wheat flour is best. Serve with salt- or dry-cured ham.
