Ingredients

1 cup green peppers, ground

6 cups sugar

1 1/2 cups white vinegar

6 ounces fruit pectin, liquid

3 drops green food coloring

Preparation

Combine ground green peppers, sugar, vinegar, and green coloring in a large sauce pan. Cook and stir over high heat until the mixture comes to a hard boil Boil for one minute, stirring constantly. Remove from heat. Stir in pectin. Let stand for five minutes. Skim off foam with a metal spoon and pour quickly into sterilized jelly glasses. Seal at once with 1/8 inch layer hot paraffin. Add lids. Yields 6 half pints.
