Ingredients

3 eggs, separated

1/2 cup sugar

1 lemon, juice and rind

1 cup whipping cream, beaten stiff

1 package vanilla wafers, crushed

Preparation

Beat egg yolks. Add sugar, lemon juice and rind. Beat egg whites and fold into first mixture. Beat whipping cream and fold into lemon mixture. Butter a small pyrex dish. Sprinkle half of crushed vanilla wafer crumbs on teh bottom of the dish. Pour lemon mixture onto crumbs. Top with second half of vanilla wafers crumbs. Freeze overnight. Cut into squares and serve.
