Ingredients
2/3 cup Sugar
1/2 teaspoon Salt
2 1/2 tablespoons Cornstarch
1 tablespoon Flour
3 cups Milk
3 Egg Yolks, slightly beaten
1 tablespoon Butter
1 1/2 teaspoons Vanilla
1/2 cup Heavy Cream
1 tablespoon Confectioners Sugar
1/4 teaspoon Vanilla
Preparation
Mix in saucepan sugar, salt, cornstarch and flour
Gradually stir in milk
Cook over medium heat, stirring constantly until mixture thickens and boils
Boil for 1 minute and remove from heat
Slowly pour in egg yolks and blend into hot mixture
Return to medium heat. Heat to boiling, stirring constantly, boil 1 minute
Remove from heat and blend in butter and 1 1/2 teaspoons vanilla
For whipped cream topping: In a large bowl, beat cream until stiff. Add confectioners sugar and 1/4 teaspoon vanilla and beat just until stiff, making sure not to overbeat.
For 8" pie: 1/2 cup sugar, 1/8 tsp salt, 2 tablespoons cornstarch, 2 1/2 cups milk, 2 large egg yolks, 3/4 tablespoon butter, 1 teaspoon vanilla
