Ingredients

1 onion, medium

4 cloves garlic, minced

2 1/2 bell peppers, diced any color or combination

1 pound ground turkey

2 cans diced tomatoes, 15 oz

3 cans chicken stock

1 teaspoon red pepper flakes

1/2 cup jasmin rice, uncooked

1/2 cup peanut butter, creamy

Preparation

Saute onions, garlic and peppers

Cook turkey in separate pan and combine with sauteed veggies

Add diced tomatoes, broth, red pepper flakes and simmer without lid, for up to an hour

Add uncooked rice and simmer until rice is cooked

Add peanut butter, add more to taste.
