Ingredients
1 pound Ginger, fresh
1 Lime
8 cups Water
3 dashes Angostura Bitters
3 cups Sugar, granulated
1 stick Cinnamon
4 Cloves
6 Raisins
Preparation
Wash and peel ginger. Grate using either a grater or food processor. Put into a dark container.
Wash lime and zest careful not to get any white pith. Add pith and juice of lime into container.
Boil water with cinnamon and cloves. Allow to cool and add water to grated ginger. Leave to r"ripen" for 3-4 days in a warm place. Top of stove works well.
Strain and add sugar to taste. Then add Angostura Bitters.
Bottle and add a few cloves and 3-4 raisins to each bottle.
Leave in refrigerator for a few days before serving.
If too strong dilute with club soda.
