Ingredients
1 1/3 cups All-Purpose Flour
1 1/3 cups Milk
1/4 cup Virtue Cider “The Mitten”
3 Eggs
3 tablespoons Sugar
1 teaspoon Vanilla Extract
2 tablespoons Unsalted Butter, Melted
3 Granny Smith Apples, Peeled and Sliced Thin
2 teaspoons Cinnamon
1/2 cup Sugar
1 teaspoon Nutmeg
3 tablespoons Unsalted Butter, Melted
1 teaspoon Vanilla Extract
1/2 teaspoon Salt
Preparation
Preheat oven to 425 degrees F, heat one ovenproof omelet pan or a cast iron skillet
For the batter, combine milk, Virtue Cider “The Mitten”, eggs, vanilla, and add the flour until smooth
Slowly incorporate melted butter into the batter and set aside
For the apples, combine apples, cinnamon, sugar, nutmeg, vanilla, butter, salt in a separate bowl, set aside
Remove skillet from oven, add 3 TB of melted butter to pan
Add the apple mixture and caramelize for 4-5 minutes until golden; top with the batter
Bake in oven about 35 minutes or until pancake puffs on the top
Remove from oven and immediately flip onto a large serving plate
