These little guys are amazing…I mean this recipe turned out so good! When I got back from London several months back, my husband asked me if I would make him some garlic mayonnaise. Ok, first off…who asks for that? LOL! He does love mayonnaise though. I think that if mayonnaise became a food group, he would be in hog heaven! So I said…“sure”. But then I thought about it…what can I make to pair with the garlic mayonnaise? Yes, you can put it on any ole sandwich and let me tell you, it is super good on an everyday sandwich…but I wanted to spice this up a bit and make him a new recipe that I know he’ll love! My husband eats sandwiches everyday for lunch. That’s all he eats and that’s all he wants. Here recently, he has been big on eating open-face sandwiches so I thought, ok…I’ll create my own version of an open-faced mini sandwich! Hubby is not gluten free, so I used a french style baguette loaf. But, if you are gluten free, you can any gluten free bread and these little suckers turn out just as yummy! I promise…because yes, I made me a gluten free version for me!!
Let’s get back to this garlic mayonnaise for a minute. Super easy to make. I mean seriously, why didn’t I think of this sooner. Just a few ingredients that you already have in your fridge such as mayonnaise, fresh garlic, pepper, olive oil and fresh lemon juice. Mix all those ingredients really well and bam, you’ve got yourself some homemade garlic mayonnaise! And this garlic mayonnaise not only goes perfect with the Garlic Mayo Chicken Baguettes with Gruyère but it also goes well on any sandwich…so make sure to store this mayo in your refrigerator so you can use it for other recipes or foods that call for mayonnaise!
If you are looking for a new type of mini sandwich, this one is super yums! You can eat these Garlic Mayo Chicken Baguettes with Gruyère for lunch with a salad, for a snack or serve these little yummies as an appetizer! Here’s how I throw this recipe together. Slice your baguettes into ½ inch slices. With a basting brush, lather each baguette with the homemade garlic mayonnaise. Then, place a thin slice of cooked chicken breast on top of the garlic mayonnaise. Top with thinly sliced or shredded Gruyère cheese. Just a little tip…shredded Gruyère cheese will melt faster than thinly sliced Gruyère cheese but my husband loves a lot of cheese so I often give him thin slices sometimes.
From there, you are ready to pop these in the oven to roast! Since shredded Gruyère cheese melts faster, I made a batch using shredded cheese for photo purposes so you could see what the shredded cheese version looks like versus the thinly sliced Gruyère cheese. You’ll literally roast these in the oven just long enough for the baguette to toast and the cheese to melt. Then they are ready to serve!

You’re probably wondering why I’m posting pictures of the Garlic Mayo Chicken Baguettes with Gruyère with cherry tomatoes in the background. Well, I’m glad you asked! My son’s cherry tomato plant is producing like crazy right now and he loves to eat his cherry tomatoes. As I was making these baguettes, he asked if he could take a bite of the baguette and then eat a baby cherry tomato. I said sure…try that and tell me how it tastes. He said it tasted so amazing…so he asked if I wanted to photograph the baguettes with his cherry tomatoes in the background. He then went to the garden and picked about 30 cherry tomatoes and placed them in a pretty white bowl and said, “Here mom…these will look so pretty in your photos!” And indeed they do! Thanks to my little lovie for his cherry tomato prop! Whatever the occasion….whether it be lunch time, snack time or party time….these Garlic Mayo Chicken Baguettes with Gruyère will be a huge hit!
