Ingredients

2 Cucumbers, peeled

1 Green pepper, seeded and peeled

1 Onion, peeled and chopped

4 cloves Garlic

2 cups Vegetable broth

6 Tomatoes, peeled

1/4 cup Apple Cider Vinegar (or red wine)

1 Juice of 1 Lemon

1 can Tomatoes, diced

2 tablespoons Tomato paste

1/4 teaspoon Cayenne

2 teaspoons Salt

1 tablespoon Thyme

Preparation

  1. Combine all vegetables, fresh and canned, in a large blender. Add broth. Blend until smooth.

  2. Season with thyme, vinegar, lemon juice, salt, and cayenne to taste.

  3. Add tomato paste for color.

  4. Refrigerate overnight. In the morning, taste and adjust seasonings.

  5. Serve very cold.
