Fruit and Yogurt Parfaits are delicious for breakfast or even as a quick snack.  If you don’t have fancy glasses or jars just the parfaits in a bowl. Use your favorite fruit or whatever is in season. 2 smart points for 1 parfait.  I was originally going to post a recipe for Instant Pot Cheesecake today after trying it out for the first time, but I decided to go with this yogurt parfait instead. The cheesecake recipe I created wasn’t up to my liking and I didn’t want to post a recipe that wasn’t good. Will have to work on that one a bit. Then I realized there are hardly any breakfast recipes on this site so my plan is to post 1 breakfast recipe a week. Yesterday I posted this recipe on my Instagram page and received a crap ton of questions. What kind of fruit did you use, where did you get that jar, what type of yogurt did I use, etc. I felt bad because I thought it was a simple recipe and there was no need to post a link to one and that is why I’m sharing it with you today. The recipe is so simple. I took some frozen mixed berries and defrosted them for 1 minute in the microwave. If you don’t have frozen fruit use fresh!  Then I layered some greek yogurt in a jar and some Kashi Go Lean Crunch Cereal. It tastes exactly like granola to me and for ¼ cup the smart points is 2. This whole entire parfait is 2 smart points. I just love fruit and yogurt parfaits and I’m so happy I finally have a low point version to eat for Breakfast now that comes together FAST.

How to make Fruit and Yogurt Parfaits

In a small microwave safe bowl defrost from frozen fruit in the microwave for 1 minute. If you don’t have frozen fruit use whatever fruit you have in the fridge. Add ½ cup of greek yogurt to the bottom of a jar or glass. Then add ½ the fruit and ½ the granola. Repeat this step one more time or until all your fruit, yogurt, and granola are gone. Enjoy! So super simple and easy to make.

Tips for Fruit and Yogurt Parfaits

Use fresh fruit instead of frozen! Find whatever fruit is leftover in your fridge and use that. Flavor up your Greek yogurt if you don’t like it plain. There are sooooooo many kinds of jello or instant pudding mix out there. Depending on what you use all you need is 2 tablespoons of the dry pudding to flavor it up. Points maybe 3 to 4 then. The granola I used is Kashi Go Lean Crunch Cereal. It has 9 grams of protein and ¼  cup is only 2 smart points. I used my barcode scanner app that WW has to find the points for this granola. The box says it’s cereal, but it sure tastes like granola to me! 

On their website, Kashi has a store locator. Check that first if you decide you want to go out and try to find some. Granola is so high in points and has a lot of sugar in it, and believe me, I’ve tried coming up with my own recipe for it or ways to make it lower in points. This is just easier for me to use store bought instead. Use your scanner on your WW app to find other low point brands of granola.
