Ingredients

2 cups Tipo 00 Flour

4 Eggs

1.5 tablespoons Olive Oil

1 teaspoon Salt

Preparation

Mix eggs, flour, oil, and salt in the bowl of a stand mixer with your hands until a shaggy dough forms.

Knead with dough hook until dough is smooth and elastic, about 10 minutes.

Cover dough with plastic wrap and let rest at least 30 minutes.

Cut dough into quarters for shaping. While working with 1/4, wrap the other quarters back in plastic wrap.

Shape the dough as you prefer. Just remember to use LOTS of flour to keep the dough from getting stuck. I use regular all-purpose flour to coat it for shaping.

Cook pasta for roughly 3 minutes
