Ingredients
2 ribs Short Ribs
1 Onion
2 cloves Garlic
1 Carrot
1 tablespoon Flour
1/8 teaspoon Salt
1/8 teaspoon Pepper
1 tablespoon Olive Oil
1 rib Celery (Optional)
1 can San Marzano Tomatoes (48 0z Can)
1/4 cup Red Wine (If you have some open)
1/4 cup Beef or chicken broth
Preparation
Salt and pepper the short ribs
Lightly flour the seasoned ribs
Add oil to Le Creuset and heat
Add ribs to hot oil and sear all sides
Remove beef
Add chopped onion, garlic, carrot, and celery (if using) to oil
Cook vegetables until onion is translucent (about 7 minutes)
Remove from heat
Break up tomatoes in pan with vegetables
Add tomato juice
Add wine, if using. Add broth if not.
Add beef back to pan
Cover and put in 350 degree oven, preferably a La Cornue, for 1.5 hours. Check periodically to make sure that there is liquid
Once the beef is broken down, remove from oven.
Cook fettuccini.
Bowl pasta. Top with beef and braising sauce.
If the braising liquid evaporates too fast, break down some more tomatoes and add them to the pan with the beef.
