Ingredients
1 bunch Fresh Basil leaves, chopped
3 cloves Garlic, pressed or chopped
2 Eggs
3 Eggplants
1/2 pound Mozzarella, Grated
3/4 cup Romano Cheese, Grated
1 box Panko crumbs, Italian Seasoned
Preparation
Halve eggplant lengthwise
Roast face-down until very soft, cool and scoop eggplant into bowl
Add eggs, chopped garlic, basil, and both grated cheeses. Mix well.
Add plain bread crumbs until mixture is just thick enough to hold a shape
Chill if time allows.
Form small pattis, dip in egg, then seasoned Panko. Fry until brown.
