Ingredients
1 to 2 pound Zucchini
3 tablespoons butter
1 red onion or sweet onion
2 cloves garlic
2 teaspoons curry powder
.5 cup cream
1.75 cups chicken stock
Preparation
Slice zucchini and saute it with onion and garlic in the butter.
Cover and cook on low for about 15 minutes or until very tender
Add curry powder, salt and pepper to taste
Add chicken stock and cream using an immersion blender or a blender blend well
