Ingredients

5 jar Jars of Apricot Preserves

2 box Lipton’s Onion Soup Mix

6 cans Canned Carrots

.5 dashes Salt and Pepper to Taste

5 3/4 pounds 1 Brisket

3 bunch Sliced Yellow Onion (or Parsnips and Carrots)

Preparation

Season Brisket with S & P. Rub into meat.

In Vitamix, puree carrots, onion soup mix and apricot preserves. Add to Roasting pan with brisket.

Cook in 350 degree oven until meat is very tender. Check after 2.5 hours. Smaller cuts of meat require less cooking time and vice versa.

Add Sliced Yellow Onion and allow baking time or sautee separately and then add to dish.
