Ingredients

1 package black beans - dried

1 can tomatoes - diced

1-2 cups ham, or ham bone with meat

1 can green chilies - chopped

1 teaspoon oregano

1 onion - chopped

1 teaspoon cumin

1 teaspoon thyme

1/2 cup bell pepper - diced

to taste salt and pepper

to taste garlic - crushed

Preparation

Soak beans in water overnight. Do not add salt.

Add remaining ingredients and bring to boil. Simmer all day.

Serve over rice with a dollop or sour cream and diced fresh tomatoes as garnish.
