Ingredients
3/4 cup dried black beans
1 tablespoon minced garlic
1 piece chopped onion
1 piece chopped bell pepper
1 tablespoon ground cumin
2 tablespoon marsala wine
1 tablespoon oregano
1 bunch cilantro
1 teaspoon lawry’s garlic salt
1.5 teaspoon sugar
Preparation
pressure cook black beans with bay leaf and salt 45mins ( 2.5:1)
Saute 1tb garlic with olive oil and set aside
Make sofrito: saute onion,bell pepper
Add cumin and saute.
deglaze with marsala wine.
add black beans, oregano and chopped cilantro stems and simmer 10 mins
turn off heat. Add garlic oil, garlic salt and sugar
serve over rice topped with cilantro
