If you’re counting carbs, this quiche is for you! The original recipe calls for a pie crust and I opted out. It’s packed full of spinach for some fiber and protein, and the gouda cheese, just makes it gouda! Sorry, for the lame joke about cheese. The first time I had this quiche was at my brother’s house. He had made it for breakfast once. We had it at 9am in the morning. That same morning my Mom and I were driving home from Minneapolis. This quiche kept me full until about 1pm. Now, that I’m watching my carb intake, I opted for a crustless quiche. It’s still delicious and yummy without the crust.  You can chose weather or not you want to add the crust or not. It’s your choice! Sprinkle some more gouda cheese on top or add in some ham, sausage or bacon for even more protein. Recipe from Cooking Light
