Ingredients
2 pieces Fresh Oranges
1 teaspoon Fresh Rosemary
2 tablespoons Honey
5 slices Sweet Potato (Cooked and sliced 1/2 inch thick)
1 piece Egg
1 teaspoon Salt and Pepper
1 piece Weetabix (1 Biscuit, crushed)
Preparation
Slice the oranges in half; squeeze out the juice into a measuring cup.
Finely chop the rosemary; set aside.
Add the honey and rosemary to the orange juice; pour into pan and heat until it reaches a boil; set aside.
Crack the egg in a bowl; add the salt and pepper; whisk until incorporated.
Crush the Weetabix biscuit; set aside.
Grab the pre-cooked and sliced sweet potatoes; dip into egg, then Weetabix mixture; repeat.
Shallow fry the crusted sweet potatoes in a pan with oil until crispy.
Remove from heat and garnish with honey mixture.
