Ingredients
2 cups fresh washed spinach leaves chopped
1 quart milk
3/4 cup cream of wheat
4 pieces egg yolks or egg beaters
2 teaspoons salt
1/2 teaspoon ground pepper
1/2 teaspoon nutmeg
3 tablespoon butter
3/4 cup gruyere shredded
Preparation
scald milk in Mwave and stir in cream of wheat. Cook 3-4 minutes then immersion blend to get rid of lumps
oven 400
beat in egg one at a time with immersion blender add the rest of the ingredients except the cheese
coat a small baking dish w/2 TBSP of the butter and pour in the batter only 1" high
cover w/ cheese and dot w/remaining butter
bake 12- 15 minutes til nicely browned
