Don’t you hate it when you buy a bag of lettuce at the grocery store and it has already gone bad the next day? What a waste of money and that has happened to me quite a few times. At least I had iceberg lettuce sitting in my fridge that hadn’t gone bad yet to use for this recipe.  I like to eat this salad in the Fall and it would be great to have as a side dish on Thanksgiving. It is loaded with apples, dried cranberries, feta cheese, and chopped nuts then gets topped with a mustard vinaigrette dressing. It’s almost like a deconstructed version of chicken salad that has apples and dried cranberries in it. 

Ingredients for Apple Cranberry Salad

Apple - any kind of apple will work for this but I prefer Honey Crisp or Granny Smith  Dried Cranberry  - do not use  fresh cranberries in this salad  Mixed Greens - literally any type of lettuce will work for this  Feta Cheese -  used reduced fat   Walnuts - sub pecans, macadamia nuts, pistachios,  or almonds if you don’t like walnuts  Dressing ingredients -  mustard, balsamic vinegar, and olive oil 

How to make Apple Cranberry Salad 

For the full recipe please see the recipe card below.  Whisk the mustard and vinegar together in a small bowl. Drizzle in the olive oil while whisking to create a dressing; set aside. Place the apple, cranberries, baby greens, feta cheese, and walnuts into a large salad bowl. Toss gently to mix, then pour on the dressing, and toss to coat.
