Ingredients
1 bag Rice Paper Wrapper Skins (about 10")
1 bunch Radishes
1 bag Shredded Carrots
1-2 bunches Fresh Mint Leaves
1 bunch Cilantro
1 piece Lemon (1 whole lemon - for zesting)
1-2 cups crispy onions or shallots
2 cups Fresh Dungeness or King Crab Meat (DO NOT USE FAKE KRAB)
1 bottle Furikake (preferably with nori sprinkles) - for topping
Preparation
Thin slice the radishes, chop fresh mint, ensure carrots are grated.
On cutting board or flat surface, line up prepped items.
Run paper rice paper wrapper under cool-lukewarm water for approximately 10 seconds or until the paper is pliable, but not soggy
Lay the paper flat on the cutting board.
Spread the ingredients in rainbow color arrangement across the middle of the wrapper. Be sure to leave at least a couple of inches of room around the edges to seal the wrap.
Fold the sides of the wrapper, from the left and right, to touch in the middle like an envelope.
Fold the bottom of the wrapper to cover all the ingredients in roll. (It will look like a pocket, leaving the top open.)
Roll tightly from the bottom up and seal the roll with the remaining upper edge.
Zest lemon on top, lightly and sprinkle furikake.
