Ingredients

2 Eggs [beaten to blend]

1/4 cup Flour

2 tablespoons Parmesan Cheese [grated]

1/2 teaspoon Salt

2 cups Corn Kernals [fresh]

1 Scallion [sliced thinly]

1/2 Jalapeno [seeded, finely chopped]

2 tablespoons Olive Oil

1/2 cup Sour Cream {for serving}

1 Lime [cut in wedges]

Preparation

  1. Pulse eggs, flour, Parmesan, and 1/2 tsp salt to combine.

  2. Add corn, scallion, and jalapeno, pulse 2 - 3 times.

  3. Heat oil in a skillet over medium heat. Working in batches, cook fritters by heaping tablespoons until golden brown.

  4. Serve with sour cream and lime wedges.
