Ingredients
1 cup fresh corn kernels
1 cup canned black beans
1 large ripe tomato, cored and cut into 1/4 inch (about 1 cup)
1/4 cup finely diced onion
1 cup lightly packed cilantro leaves, coarsely chopped
1 jalapeño pepper, seeded and finely chopped
2 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon cumin
Preparation
Combine all the ingredients in a serving bowl and toss well. Allow to stand for. 30 minutes. Taste, add freshly ground black pepper and cumin to taste. Serve.
