Ingredients
3 links Chorizo Sausage
1 Onion (halved and sliced)
2 garlic cloves chopped
1 teaspoon Smoked Paprika
1 cup Basmati Rice
2 cups Warm Chicken Stock
2 Roasted Red Peppers (jar) chopped
12 ounce Cherry Tomatoes or Diced tomatoes
3 ounce Pitted Green Olives
Preparation
Slice Chorizo lengthwise and cook until oil starts to seep out.
Pour onion and garlic into pan with chorizo and cook for a few minutes.
Add Paprika, Rice, Chicken Stock and Roasted peppers. Stir in everything. Cook, covered, for 5 minutes.
Add Tomatoes and pitted green olives. Stir in and cook 8 to 10 minutes until rice is tender.
