Ingredients

1/2 cup Sugar

8 tablespoons Rum

3/4 -1 pound Dark Chocolate

5-6 tablespoons Whipping (Heavy) Cream (see other)

4 Egg WHITES

4 cups Whipping (Heavy) Cream (see other)

2 box Nabisco Famous Chocolate Wafer Cookies (2 Boxes, but you only need 1 1/4-ish for crust.)

Preparation

Step 1: Cook Sugar & Rum over very low heat until dissolved (but not brown in color).

Step 2: Melt in double boiler (or small pan in medium pan), 3/4 lb of Dark Chocolate.

Step 3: When Chocolate is melted, stir in 5-6 Tablespoons of Heavy Cream.

Step 4: Add the syrup (Step 1) to the melted Chocolate (Step 2) and stir until smooth. Let cool off to the side for a few minute.

Step 5: With an electric mixer, beat (4) Egg Whites until STIFFLY beaten (it maintains it shape. *Do Not over beat.

Step 6: In a separate bowl, fold Step 5 (Stiff Egg Whites) into the Chocolate & Rum mixture.

Step 7: Clean the mixing bowl and Beat (4) cups of Heavy Whipping Cream until stiff (but do not over mix).

Step 8: In a larger bowl, fold together the whipped cream and the egg white & chocolate mixture.

Step 9: Either place the mousse in a springform pan cookie crumb (see below) or glass vessels.
