Ingredients

1/2 cup butter

1/2 cup brown sugar

1/2 cup white sugar

1 egg

1 teaspoon vanilla extract

1 cup banana - mashed

1 teaspoon baking soda

1 1/2 cups flour

1 teaspoon baking powder

1 teaspoon salt

3 tablespoons cocoa dissolved in a little hot water

Preparation

combine first 5 ingredients in mixing bowl to creamy consistency

mix the baking soda into the mashed bananas, let stand

dissolve the cocoa into a little hot water

add milk into the dissolved cocoa

combine remaining dry ingredients in a separate bowl, flour, baking soda and salt

to the mixing bowl, add banana mix and cocoa mix, beat on low

add the dry mixture and beat to cake batter conistency

pour into 9 x 9 greased cake pan

bake in slow oven - 300 degrees for about 40 minutes

for a double recipe, use a 9 x 13 glass - extend cooking time until toothpick comes out clean
