Ingredients
1 head Yellow Onion, chopped
1 head Yellow Bell Pepper, chopped
1 head Red Bell Pepper, chopped
1 head Orange Bell Pepper, chopped
2 pounds Ground Beef
1 packet Carroll Shelby Chili Kit, Spice Packet only
15 ounces Canned Petite Diced Tomatoes
8 ounces Canned Tomato Sauce
2 cups Water
1 packet Carroll Shelby Masa Flour (optional)
1 packet Carroll Shelby Cayenne Pepper (optional, to taste)
15 ounces Canned Chili Beans, drained and rinsed
15 ounces Canned Pinto Beans, drained and rinsed
Preparation
Saute onion and ground beef until meat is no longer pink. Add peppers, tomatoes, sauce, water and spice packet and stir to combine.
Bring to a low boil, then reduce heat to a simmer.
Cover and simmer for 30 minutes.
If desired, mix masa flour with 1/3 cup water and add to the pot. Simmer for 5 more minutes.
Add beans, simmer an additional 5 minutes.
