You will never want to buy store-bought granola bars again after making these chewy no-bake granola bars with chocolate chips. The best part about these granola bars is that they are no-bake and don’t require any baking in the oven. The bars are made with natural ingredients including coconut oil, honey, and oats, etc… They are also very good for you too!

This granola bar is made with real ingredients that are not WW friendly. I have also not tried using substitutes for any of the ingredients below. PB2 does not even compare to real peanut butter in my opinion. 🙂 Peanut Butter - Real peanut butter made of only ground-up peanuts - Kirkland has a good brand at Costco Honey - Use Real raw and unfiltered honey Coconut Oil - this gets melted in the pan so it doesn’t have to be melted prior Shredded Coconut - unsweetened Mini Chocolate Chips or chocolate chips
How to make Coconut Bars
To print the full recipe please see the recipe card below. Heat a medium sized pot on medium-low heat over the stove top. Melt together nut butter, honey, and coconut oil, stirring until smooth in the pot. Remove from the stove and stir in the oats and coconut. Pour the oats into a 9- by 13-inch lined baking dish. Evenly spread the oat mix throughout the pan using a spatula or offset knife. Sprinkle with mini chocolate chips and firmly press down with the back of a spatula or clean hands. Refrigerate for 2 hours or until firm. Slice into squares or bars. Store granola bars in the refrigerator in an airtight container with wax paper separating the layers, or individually wrapped in plastic wrap Serving size: 1 bar. (Cut into 15 equal bars)
