Ingredients

1 packet Tofurky Slow Roasted Chick’n

3/4 packet Go Veggie Vegan Mexican Flavor Shreds

3/4 packet Mikey’s Grain-Free Tortillas, Warmed

1/4 cup Onion, Diced

3 wedges Limes

1 cup Green Bell Pepper, Sliced Thin

1 cup Yellow Bell Pepper, Sliced Thin

1 cup Red Bell Pepper, Sliced Thin

1/2 cup Tomato, Diced

1 teaspoon Salt

1 teaspoon Pepper

1 tablespoon Cumin

2 sprigs Cilantro, chopped

1 tablespoon Olive Oil

Preparation

In a large non-stick skillet, stir-fry Tofurky Slow Roasted Chick’n in olive oil until golden brown. Add salt and pepper to taste.

Stir in sliced bell peppers, tomatoes, onion and cilantro and cumin.

Top with fresh squeezed lime juice.

Add stir fry combo into warm Mikey’s Grain-Free Tortillas.

Top with Go Veggie Vegan Mexican Flavor Shreds.

Splash with remaining fresh squeezed lime juice.
